PREP TIME: about 30 minutes

COOK TIME: 6 weeks

TOTAL TIME: 6 weeks

INGREDIENTS

3 quarts spring water (96 FL OZ)

6 cups cane sugar

4 cups mashed muscadines

2 ¼ tsp active dry yeast or wine yeast

DIRECTIONS

  1. Warm the spring water on the stove to a lukewarm temperature. Pour it in a clean, sanitized primary container.

  2. Add the sugar and stir

  3. Mash the muscadines with a masher. Add them to the water and sugar mixture.

  4. Sprinkle the yeast on top of the mixture without stirring.

  5. Cover the primary container with a clean kitchen towel and let it rest in a cool dry place for 24 hours. Do not close the lid on the container, the kitchen towel allows it stay covered and sanitary while also releasing gas from the yeast.

  6. After 24 hours, stir the mixture. Stir once every day for the next 6 days and return back to a cool dry place.

  7. After 6 days, strain the mixture and transfer into a secondary clean container, and fill the remaining space in the container with spring water.

  8. Put an airtight lid on the container and place back into the cool dry place for at least 6 weeks.

  9. Once fully fermented, transfer to wine bottles. Enjoy!
